Mushroom Fry

Serves 4.

1 cup capsicum/bell peppers, diced
1 cup onions, diced
1 cup mushrooms, halved
1 tbsp oil (for best results, use olive oil)
2 tsp soya sauce
1/2 tsp chilli powder
Salt, to taste

In a frying pan, add olive oil, capsicum and onions. Fry for 1-2 minutes. Add mushrooms, soya sauce, chilli powder and salt. Fry for 1-2 minutes.

Serve with chapatis or bread slices.

Fruit Whip

Serves 4.

1 litre milk, condensed to 1/2 litre
1 cup apple, grated
1 cup chickoo, grated or finely chopped
1 tbsp fresh coconut
1 tbsp almonds, grated
1 tbsp cashews, grated
1 tbsp pistachios, grated
1 cup sugar
1 pinch cardamoms

Mix all ingredients in a bowl. Refrigerate for 1/2 hour.

Serve with 1 spoon of coconut cream.
